Maple-Glazed Duck with Roasted Vegetables

Ingredients
- 2 duck breasts
- 2 tablespoons maple syrup
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- 2 cups mixed root vegetables, diced (garden or locally grown)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Toss vegetables with olive oil, salt, and pepper. Roast for 25-30 minutes.
- Score the duck breasts and season with salt and pepper. Sear skin-side down in a hot skillet for 8-10 minutes, then flip and cook for another 5 minutes. Let rest before slicing.
- In a small bowl, mix maple syrup, soy sauce, and Dijon mustard. Brush over duck slices and serve with roasted vegetables.
