Herb-Crusted Moose Roast

Ingredients
- 2 lbs moose roast
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped (garden-grown)
- 1 tbsp fresh thyme, chopped (garden-grown)
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced (garden-grown)
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F. In a bowl, mix olive oil, rosemary, thyme, Dijon mustard, garlic, salt, and pepper to create a paste.
- Rub the herb mixture all over the moose roast.
- Place the roast in a roasting pan and cook for 2-3 hours, or until the internal temperature reaches 140°F for medium-rare.
- Let rest for 10 minutes before slicing and serving.
