Herb-Crusted Moose Roast

Ingredients

  • 2 lbs moose roast
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped (garden-grown)
  • 1 tbsp fresh thyme, chopped (garden-grown)
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced (garden-grown)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F. In a bowl, mix olive oil, rosemary, thyme, Dijon mustard, garlic, salt, and pepper to create a paste.
  2. Rub the herb mixture all over the moose roast.
  3. Place the roast in a roasting pan and cook for 2-3 hours, or until the internal temperature reaches 140°F for medium-rare.
  4. Let rest for 10 minutes before slicing and serving.
