Grilled Venison Burgers with Wild Mushroom Aioli

Ingredients

  • 1 pound ground venison
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1/2 cup wild mushrooms, finely chopped (garden or locally grown)
  • 1/4 cup mayonnaise
  • 1 teaspoon lemon juice

Instructions

  1. In a bowl, mix ground venison, breadcrumbs, egg, garlic powder, smoked paprika, salt, and pepper. Form into 4 patties.
  2. Preheat grill to medium-high heat. Grill patties for 4-5 minutes per side, or until fully cooked.
  3. In a skillet, sauté wild mushrooms until golden. Mix with mayonnaise and lemon juice to make the aioli.
  4. Assemble burgers with buns, patties, and mushroom aioli. Serve immediately.
