Grilled Trout with Herb Butter

Ingredients

  • 4 whole trout, cleaned
  • 1/4 cup unsalted butter, softened
  • 2 tbsp parsley, chopped (garden or locally grown)
  • 1 tsp thyme, chopped (garden or locally grown)
  • 1 lemon, sliced
  • Salt and black pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the grill to medium heat.
  2. In a small bowl, mix butter, parsley, thyme, salt, and black pepper.
  3. Stuff each trout with a slice of lemon and a dollop of herb butter.
  4. Brush the outside of the trout with olive oil and season with salt and black pepper.
  5. Grill the trout for 8-10 minutes on each side, or until the skin is crispy and the meat is flaky.
