Goose Gumbo

Ingredients

  • 2 lbs goose breast, cubed
  • 1 cup celery, diced (garden-grown)
  • 1 cup bell peppers, diced (garden-grown)
  • 1 medium onion, diced (garden-grown)
  • 1/2 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 6 cups chicken stock
  • 1/2 lb andouille sausage, sliced
  • 2 tsp Cajun seasoning
  • 3 cups cooked white rice
  • Salt and pepper to taste

Instructions

  1. Make a roux by cooking flour and oil over medium heat, stirring constantly, until deep brown.
  2. Add celery, bell peppers, and onions. Sauté until softened.
  3. Stir in goose, sausage, stock, and seasoning. Simmer for 1.5 hours.
  4. Serve hot over cooked white rice.
