Ingredients
- 2 lbs goose breast, cubed
- 1 cup celery, diced (garden-grown)
- 1 cup bell peppers, diced (garden-grown)
- 1 medium onion, diced (garden-grown)
- 1/2 cup all-purpose flour
- 1/4 cup vegetable oil
- 6 cups chicken stock
- 1/2 lb andouille sausage, sliced
- 2 tsp Cajun seasoning
- 3 cups cooked white rice
- Salt and pepper to taste
Instructions
- Make a roux by cooking flour and oil over medium heat, stirring constantly, until deep brown.
- Add celery, bell peppers, and onions. Sauté until softened.
- Stir in goose, sausage, stock, and seasoning. Simmer for 1.5 hours.
- Serve hot over cooked white rice.
