Goose and Wild Rice Soup

Ingredients

  • 2 cups cooked goose meat, shredded
  • 1 tbsp butter
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 4 cups chicken or game stock
  • 1 cup cooked wild rice
  • 1/2 tsp thyme
  • 1/2 tsp sage
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add onion, carrots, and celery, and sauté until softened.
  2. Add stock, goose meat, thyme, and sage. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Stir in cooked wild rice and simmer for another 10 minutes. Adjust seasoning as needed.
  4. Serve hot with crusty bread.
