Goose and Wild Rice Soup

Ingredients
- 2 cups cooked goose meat, shredded
- 1 tbsp butter
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 4 cups chicken or game stock
- 1 cup cooked wild rice
- 1/2 tsp thyme
- 1/2 tsp sage
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat. Add onion, carrots, and celery, and sauté until softened.
- Add stock, goose meat, thyme, and sage. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in cooked wild rice and simmer for another 10 minutes. Adjust seasoning as needed.
- Serve hot with crusty bread.
