Elk Stroganoff with Mushrooms

This creamy elk stroganoff features tender strips of elk meat, sautéed mushrooms, and a rich sour cream sauce. A hearty dish perfect for cold nights.
Ingredients
- 1 lb elk meat, thinly sliced
- 2 cups mushrooms, sliced
- 1 medium onion, diced (garden-grown)
- 1 clove garlic, minced (garden-grown)
- 1 cup beef broth
- 1 cup sour cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Cooked egg noodles, for serving
Instructions
- Heat olive oil in a skillet over medium heat. Cook elk meat until browned and set aside.
- Add onions, garlic, and mushrooms to the skillet, cooking until softened.
- Deglaze the pan with beef broth, then stir in sour cream. Simmer until sauce thickens.
- Return elk to the skillet and cook for an additional 5 minutes. Serve over egg noodles.
