Elk Stroganoff with Mushrooms

This creamy elk stroganoff features tender strips of elk meat, sautéed mushrooms, and a rich sour cream sauce. A hearty dish perfect for cold nights.

Ingredients

  • 1 lb elk meat, thinly sliced
  • 2 cups mushrooms, sliced
  • 1 medium onion, diced (garden-grown)
  • 1 clove garlic, minced (garden-grown)
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Cooked egg noodles, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Cook elk meat until browned and set aside.
  2. Add onions, garlic, and mushrooms to the skillet, cooking until softened.
  3. Deglaze the pan with beef broth, then stir in sour cream. Simmer until sauce thickens.
  4. Return elk to the skillet and cook for an additional 5 minutes. Serve over egg noodles.
