Elk Chili with Hatch Green Chiles

A hearty elk chili enhanced with the smoky flavor of Hatch green chiles and spices, perfect for cold evenings or game day gatherings.

Ingredients
- 2 lbs ground elk
- 1 cup Hatch green chiles, roasted and diced
- 1 medium onion, diced (garden-grown)
- 3 cloves garlic, minced (garden-grown)
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions and garlic until softened.
- Add the ground elk and cook until browned.
- Stir in the Hatch green chiles, tomatoes, beans, and spices. Reduce heat to low and simmer for 45 minutes.
- Adjust seasoning with salt and pepper. Serve hot with optional toppings like cheese or sour cream.
