Elk Chili with Hatch Green Chiles

A hearty elk chili enhanced with the smoky flavor of Hatch green chiles and spices, perfect for cold evenings or game day gatherings.

Ingredients

  • 2 lbs ground elk
  • 1 cup Hatch green chiles, roasted and diced
  • 1 medium onion, diced (garden-grown)
  • 3 cloves garlic, minced (garden-grown)
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until softened.
  2. Add the ground elk and cook until browned.
  3. Stir in the Hatch green chiles, tomatoes, beans, and spices. Reduce heat to low and simmer for 45 minutes.
  4. Adjust seasoning with salt and pepper. Serve hot with optional toppings like cheese or sour cream.
