Duck Gumbo with Andouille Sausage

This flavorful duck gumbo is a Southern classic, combining tender duck, spicy andouille sausage, and a rich, savory roux. Serve it over rice for a comforting meal packed with bold flavors.

Ingredients

  • 2 duck breasts, diced
  • 1/2 lb andouille sausage, sliced
  • 1 green bell pepper, diced (garden-grown)
  • 1 onion, diced (garden-grown)
  • 2 stalks celery, diced (garden-grown)
  • 3 cups chicken or duck stock
  • 1/4 cup flour
  • 1/4 cup vegetable oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat. Whisk in flour to create a roux, stirring constantly until it turns a deep brown color.
  2. Add duck, sausage, bell pepper, onion, and celery to the pot. Cook until vegetables are softened.
  3. Pour in stock and season with paprika, salt, and pepper. Simmer for 45 minutes to 1 hour.
  4. Serve over rice and garnish with parsley if desired.
