Duck Gumbo with Andouille Sausage

Ingredients
- 2 duck breasts, diced
- 1/2 lb andouille sausage, sliced
- 1 green bell pepper, diced (garden-grown)
- 1 onion, diced (garden-grown)
- 2 stalks celery, diced (garden-grown)
- 3 cups chicken or duck stock
- 1/4 cup flour
- 1/4 cup vegetable oil
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat. Whisk in flour to create a roux, stirring constantly until it turns a deep brown color.
- Add duck, sausage, bell pepper, onion, and celery to the pot. Cook until vegetables are softened.
- Pour in stock and season with paprika, salt, and pepper. Simmer for 45 minutes to 1 hour.
