Duck Chili with Beans and Peppers

This hearty duck chili combines tender shredded duck with beans, peppers, and a medley of spices for a warming dish inspired by Midwestern and Plains flavors.

Ingredients

  • 2 cups cooked duck, shredded
  • 1 can kidney beans, drained
  • 1 bell pepper, diced (garden or locally grown)
  • 1 onion, diced (garden or locally grown)
  • 2 cups diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot. Sauté onion and bell pepper until softened.
  2. Add shredded duck, beans, tomatoes, chili powder, and cumin. Stir to combine.
  3. Simmer for 45 minutes to 1 hour, stirring occasionally. Adjust seasoning with salt and pepper.
  4. Serve hot with cornbread or rice.
