Duck Chili with Beans and Peppers

This hearty duck chili combines tender shredded duck with beans, peppers, and a medley of spices for a warming dish inspired by Midwestern and Plains flavors.

Ingredients
- 2 cups cooked duck, shredded
- 1 can kidney beans, drained
- 1 bell pepper, diced (garden or locally grown)
- 1 onion, diced (garden or locally grown)
- 2 cups diced tomatoes
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot. Sauté onion and bell pepper until softened.
- Add shredded duck, beans, tomatoes, chili powder, and cumin. Stir to combine.
- Simmer for 45 minutes to 1 hour, stirring occasionally. Adjust seasoning with salt and pepper.
- Serve hot with cornbread or rice.
