Ingredients
- 2 duck breasts
- 1 cup grits
- 2 cups chicken or duck stock
- 1/2 cup milk
- 2 tablespoons butter
- 2 garlic cloves, minced (garden or locally grown)
- Salt and pepper to taste
Instructions
- Cook the grits according to package instructions, using stock and milk for extra creaminess. Stir in 1 tablespoon butter and season with salt and pepper.
- Score the duck breasts, season with salt and pepper, and sear in a hot skillet skin-side down for 8-10 minutes. Flip and cook for another 5 minutes. Let rest before slicing.
- In the same skillet, melt the remaining butter and sauté garlic until fragrant. Drizzle over the duck and grits before serving.
