Duck and Grits with Garlic Butter Sauce

Ingredients

  • 2 duck breasts
  • 1 cup grits
  • 2 cups chicken or duck stock
  • 1/2 cup milk
  • 2 tablespoons butter
  • 2 garlic cloves, minced (garden or locally grown)
  • Salt and pepper to taste

Instructions

  1. Cook the grits according to package instructions, using stock and milk for extra creaminess. Stir in 1 tablespoon butter and season with salt and pepper.
  2. Score the duck breasts, season with salt and pepper, and sear in a hot skillet skin-side down for 8-10 minutes. Flip and cook for another 5 minutes. Let rest before slicing.
  3. In the same skillet, melt the remaining butter and sauté garlic until fragrant. Drizzle over the duck and grits before serving.
