Crispy Duck and Cornbread Casserole

This crispy duck casserole combines tender shredded duck, sweet cornbread, and savory herbs for a comforting dish inspired by Southern and Plains states’ traditions.

Ingredients

  • 2 cups cooked duck, shredded
  • 1 cup cornbread, crumbled
  • 1/2 cup chicken or duck stock
  • 1/4 cup diced onion (garden or locally grown)
  • 1/4 cup diced celery (garden or locally grown)
  • 2 tablespoons butter
  • 1 teaspoon thyme (garden or locally grown)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Melt butter in a skillet and sauté onion and celery until softened.
  2. In a large bowl, combine shredded duck, crumbled cornbread, sautéed vegetables, thyme, stock, salt, and pepper.
  3. Transfer the mixture to a baking dish and bake for 30-40 minutes, until golden and crispy on top.
  4. Serve warm as a main dish or side.
