Ingredients
- 1 lb catfish fillets, finely chopped
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 1 large egg
- 1/4 cup green onions, chopped (garden-grown)
- 1 tsp paprika
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a bowl, combine cornmeal, flour, milk, egg, green onions, paprika, salt, and pepper. Stir in chopped catfish until just combined.
- Heat oil in a deep skillet over medium heat. Drop spoonfuls of the mixture into the oil and fry until golden brown, about 3 minutes per side.
- Drain on paper towels and serve with tartar sauce or remoulade.
