Catfish Cornmeal Fritters

Crispy on the outside and tender on the inside, these catfish fritters are a Southern classic. Fried catfish has been a staple in Southern cooking for generations, with its roots in communal fish fries. This recipe reimagines the tradition in a bite-sized form that’s perfect for sharing.

Ingredients

  • 1 lb catfish fillets, finely chopped
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1/2 cup milk
  • 1 large egg
  • 1/4 cup green onions, chopped (garden-grown)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a bowl, combine cornmeal, flour, milk, egg, green onions, paprika, salt, and pepper. Stir in chopped catfish until just combined.
  2. Heat oil in a deep skillet over medium heat. Drop spoonfuls of the mixture into the oil and fry until golden brown, about 3 minutes per side.
  3. Drain on paper towels and serve with tartar sauce or remoulade.
