Ingredients
- 1 lb caribou meat, sliced thin
- 1 cup wild mushrooms (garden or locally grown)
- 1 onion, diced (garden or locally grown)
- 2 cups beef stock
- 1 cup sour cream
- 2 tbsp flour
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Season caribou with salt and pepper. Sear in butter until browned, then set aside.
- Sauté mushrooms and onions until softened.
- Stir in flour, then gradually add beef stock to form a sauce.
- Return caribou to the pan and simmer for 30 minutes.
