Caribou Stroganoff with Wild Mushrooms

Ingredients

  • 1 lb caribou meat, sliced thin
  • 1 cup wild mushrooms (garden or locally grown)
  • 1 onion, diced (garden or locally grown)
  • 2 cups beef stock
  • 1 cup sour cream
  • 2 tbsp flour
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Season caribou with salt and pepper. Sear in butter until browned, then set aside.
  2. Sauté mushrooms and onions until softened.
  3. Stir in flour, then gradually add beef stock to form a sauce.
  4. Return caribou to the pan and simmer for 30 minutes.
