Braised Squirrel with Garden Vegetables

This braised squirrel dish is slow-cooked with garden vegetables in a flavorful broth, resulting in tender meat and a rustic, hearty meal.

Ingredients

  • 2 squirrels, cleaned and cut into pieces
  • 2 tbsp olive oil
  • 1 medium onion, diced (garden-grown)
  • 2 carrots, sliced (garden-grown)
  • 2 potatoes, diced (garden-grown)
  • 2 cups chicken stock
  • 1 tsp thyme (garden-grown)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot. Brown squirrel pieces on all sides and set aside.
  2. Add onions, carrots, and potatoes to the pot. Cook for 5 minutes until slightly softened.
  3. Return squirrel to the pot and pour in chicken stock. Add thyme, salt, and pepper. Cover and simmer on low heat for 2 hours.
  4. Serve with crusty bread or over rice.
