Blackened Redfish with Lemon Herb Rice

This blackened redfish is bold and spicy, paired with a light and refreshing lemon herb rice for a balanced and flavorful meal.

Ingredients
- 2 redfish fillets
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 cup cooked rice
- 1 tbsp butter
- Juice of 1 lemon
- 1 tbsp fresh parsley, chopped (garden-grown)
- 1 tsp fresh dill, chopped (garden-grown)
- Salt and pepper to taste
Instructions
- Rub redfish fillets with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook for 3-4 minutes per side until blackened.
- In a saucepan, mix cooked rice with butter, lemon juice, parsley, dill, salt, and pepper. Heat until warmed through.
- Serve blackened redfish over lemon herb rice and garnish with additional herbs if desired.
