Blackened Redfish with Lemon Herb Rice

This blackened redfish is bold and spicy, paired with a light and refreshing lemon herb rice for a balanced and flavorful meal.

Ingredients

  • 2 redfish fillets
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 cup cooked rice
  • 1 tbsp butter
  • Juice of 1 lemon
  • 1 tbsp fresh parsley, chopped (garden-grown)
  • 1 tsp fresh dill, chopped (garden-grown)
  • Salt and pepper to taste

Instructions

  1. Rub redfish fillets with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook for 3-4 minutes per side until blackened.
  2. In a saucepan, mix cooked rice with butter, lemon juice, parsley, dill, salt, and pepper. Heat until warmed through.
  3. Serve blackened redfish over lemon herb rice and garnish with additional herbs if desired.
