Blackened Redfish Po'Boy

This Cajun-inspired po'boy features blackened redfish served on crusty bread with lettuce, tomato, and a tangy remoulade sauce. A flavorful sandwich perfect for lunch or dinner.

Ingredients

  • 2 redfish fillets
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 4 sandwich rolls
  • 1 cup lettuce, shredded (garden-grown)
  • 1 tomato, sliced (garden-grown)
  • 1/4 cup mayonnaise
  • 1 tbsp hot sauce
  • 1 tsp lemon juice

Instructions

  1. Rub redfish fillets with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook fillets for 3-4 minutes per side until blackened.
  2. In a small bowl, mix mayonnaise, hot sauce, and lemon juice to make the remoulade.
  3. Assemble sandwiches with lettuce, tomato, blackened redfish, and remoulade sauce. Serve immediately.
