Blackened Redfish Po'Boy

This Cajun-inspired po'boy features blackened redfish served on crusty bread with lettuce, tomato, and a tangy remoulade sauce. A flavorful sandwich perfect for lunch or dinner.

Ingredients
- 2 redfish fillets
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 4 sandwich rolls
- 1 cup lettuce, shredded (garden-grown)
- 1 tomato, sliced (garden-grown)
- 1/4 cup mayonnaise
- 1 tbsp hot sauce
- 1 tsp lemon juice
Instructions
- Rub redfish fillets with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook fillets for 3-4 minutes per side until blackened.
- In a small bowl, mix mayonnaise, hot sauce, and lemon juice to make the remoulade.
- Assemble sandwiches with lettuce, tomato, blackened redfish, and remoulade sauce. Serve immediately.
