Blackened Catfish with Cajun Cream Sauce

Ingredients
- 4 catfish fillets
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1/2 cup heavy cream
- 1/4 cup chicken stock
- 1 tsp smoked paprika
- 1 clove garlic, minced (garden-grown)
- Salt and pepper to taste
Instructions
- Rub catfish fillets with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook for 4-5 minutes per side until blackened.
- In the same skillet, reduce heat to medium and add garlic, chicken stock, and heavy cream. Stir in smoked paprika, salt, and pepper, and simmer until thickened.
- Serve blackened catfish with the Cajun cream sauce drizzled on top.
