Blackened Catfish with Cajun Cream Sauce

Ingredients

  • 4 catfish fillets
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/4 cup chicken stock
  • 1 tsp smoked paprika
  • 1 clove garlic, minced (garden-grown)
  • Salt and pepper to taste

Instructions

  1. Rub catfish fillets with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook for 4-5 minutes per side until blackened.
  2. In the same skillet, reduce heat to medium and add garlic, chicken stock, and heavy cream. Stir in smoked paprika, salt, and pepper, and simmer until thickened.
  3. Serve blackened catfish with the Cajun cream sauce drizzled on top.
