Black Bear Stew with Root Vegetables

A rich and hearty stew made with black bear meat, potatoes, carrots, and aromatic herbs. This slow-cooked dish is perfect for warming up after a long day outdoors.

Ingredients

  • 2 lbs black bear meat, cubed
  • 2 potatoes, diced (garden-grown)
  • 2 carrots, diced (garden-grown)
  • 1 onion, diced (garden-grown)
  • 2 cloves garlic, minced (garden-grown)
  • 3 cups beef or game stock
  • 1 tsp dried thyme
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the black bear meat and set aside.
  2. Add onion and garlic to the pot, cooking until softened. Stir in potatoes, carrots, and thyme.
  3. Return bear meat to the pot and add stock. Simmer over low heat for 2-3 hours, stirring occasionally, until meat is tender.
  4. Adjust seasoning with salt and pepper before serving.
