Black Bear Stew with Root Vegetables

A rich and hearty stew made with black bear meat, potatoes, carrots, and aromatic herbs. This slow-cooked dish is perfect for warming up after a long day outdoors.
Ingredients
- 2 lbs black bear meat, cubed
- 2 potatoes, diced (garden-grown)
- 2 carrots, diced (garden-grown)
- 1 onion, diced (garden-grown)
- 2 cloves garlic, minced (garden-grown)
- 3 cups beef or game stock
- 1 tsp dried thyme
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Brown the black bear meat and set aside.
- Add onion and garlic to the pot, cooking until softened. Stir in potatoes, carrots, and thyme.
- Return bear meat to the pot and add stock. Simmer over low heat for 2-3 hours, stirring occasionally, until meat is tender.
- Adjust seasoning with salt and pepper before serving.
