Baked Walleye with Parmesan Crust

Ingredients

  • 4 walleye fillets
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (garden or locally grown)
  • 1 clove garlic, minced (garden or locally grown)
  • 2 tbsp olive oil
  • Juice of 1 lemon (garden or locally grown)

Instructions

  1. Preheat oven to 375°F. Place walleye fillets on a greased baking sheet and season with salt and pepper.
  2. In a small bowl, mix breadcrumbs, Parmesan cheese, parsley, garlic, olive oil, and lemon juice.
  3. Spread the mixture evenly over the fillets, pressing lightly to adhere.
  4. Bake for 20 minutes, or until the fish flakes easily with a fork and the topping is golden brown. Serve with lemon wedges.
