Baked Bass with Lemon Thyme Crust

Ingredients

  • 4 bass fillets
  • 1/2 cup breadcrumbs
  • 1 tbsp thyme, chopped (garden or locally grown)
  • 1 tbsp parsley, chopped (garden or locally grown)
  • 1 lemon, zested
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix breadcrumbs, thyme, parsley, lemon zest, olive oil, salt, and black pepper.
  3. Place the bass fillets on the prepared baking sheet. Press the breadcrumb mixture onto the top of each fillet to form a crust.
  4. Bake for 15-20 minutes, or until the crust is golden brown and the fish is cooked through.
