Herb-Crusted Axis Deer with Wild Mushroom Sauce

Ingredients

  • 2 lbs Axis deer tenderloin
  • 1/4 cup fresh parsley, chopped (garden-grown)
  • 1 tbsp fresh rosemary, chopped (garden-grown)
  • 1 tbsp fresh thyme, chopped (garden-grown)
  • 2 cloves garlic, minced (garden-grown)
  • 1 cup wild mushrooms, sliced
  • 1/2 cup red wine
  • 1/4 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season the tenderloin with salt and pepper. Mix parsley, rosemary, thyme, and garlic into a paste with olive oil, and coat the tenderloin.
  2. Heat a skillet over medium-high heat and sear the tenderloin on all sides. Transfer to the oven and roast for 20 minutes for medium-rare.
  3. In the same skillet, sauté mushrooms until softened. Add red wine and reduce by half. Stir in cream and simmer until thickened.
  4. Slice the tenderloin and serve with the mushroom sauce.
