Herb-Crusted Axis Deer with Wild Mushroom Sauce

Ingredients
- 2 lbs Axis deer tenderloin
- 1/4 cup fresh parsley, chopped (garden-grown)
- 1 tbsp fresh rosemary, chopped (garden-grown)
- 1 tbsp fresh thyme, chopped (garden-grown)
- 2 cloves garlic, minced (garden-grown)
- 1 cup wild mushrooms, sliced
- 1/2 cup red wine
- 1/4 cup heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Season the tenderloin with salt and pepper. Mix parsley, rosemary, thyme, and garlic into a paste with olive oil, and coat the tenderloin.
- Heat a skillet over medium-high heat and sear the tenderloin on all sides. Transfer to the oven and roast for 20 minutes for medium-rare.
- In the same skillet, sauté mushrooms until softened. Add red wine and reduce by half. Stir in cream and simmer until thickened.
- Slice the tenderloin and serve with the mushroom sauce.
